This week my meal to perfect is the salmon dish. We put together a grilled cedar paper wrapped grilled salmon with a honey mustard sauce, cashew wild rice and roasted broccoli.

SUMMARY/ PERSONAL OBJECTIVES
The hardest part of this dish is by far the salmon. It feels almost impossible to figure out the timing of it because of the fact that the grill is different temperatures in different spots and it is wrapped in cedar paper so I cant see how it is cooking. The flavor combination of the honey mustard sauce and the cajun seasoning blend very nicely. We figured out the the rice needs extra flavor so to fix it I am going to cook the wild rice in chicken stock. The broccoli doesn't work with this dish so for next week we are going to swap it for a different vegetable, maybe asparagus. Many changes still need to be made. We have a long way to go before the food is restaurant ready but Chef Alisa and Tracy have already taught me so much when it comes to timing and problem solving and it is only the first week.
