Personal Observations
I LOVE egg salad sandwiches. I added some spice to them and i could not stop eating them! They were creamy but still had texture and had the perfect kick. I enjoyed it on french bread but the white bread was nice too. The salmon mousse was odd to make. in my opinion it had a lot of unnecessary steps in the recipe. The mousse was good but i'm sure it would have worked just fine without the veloute, i guess just meant for added flavor. The salmon flavor held strong and was great in both vessels.

Smoked Salmon Mousse Barquettes were plated and showed good presentation in both styles made-filled barquettes as well as cucumber cups. Mousse has very nice smoked flavor of the salmon. Presentation is great as it shows height from the dill sprigs as well as the piping of the mousse. Very nice use of brunoise cucumber for additional color and affect.
Egg Salad Tea Sandwich has very good flavor with nice tangy profile from the mustard and spices added. Cut into triangle shapes adds nice eye appeal as well. Crusts trimmed away and sandwiches were delicate and of 2 bites.
