Basic crackers were correctly prepped and baked. Very good flavor. Need some more baking time to give them better crunch.
Mozzarella was fantastic. Great smooth, shiny outer surface. Interior smooth and creamy. Excellent flavor as well. Nicely made caprese salad. Great taste of the freshest cheese around. Tomato, basil all highlight the freshness of the mozz.
Personal Observations
This week of class was particularly fun because it was focused on cheese making. I was surprised at how simple the making of mozzarella is. It was very delicious and and a fairly quit project. I also made the crackers which could have used a longer baking time but were still very tasty. the broccoli mousse was way too firm because of the addition of too much gelatin and had a very weird texture.
