SUMMARY
Ganache cant be worked with for long and sometimes you have to accept imperfections because the more you work with it the more likely you will make it worse.
PERSONAL OBSERVATIONS
The pan that you cook your brownies in is very important because it determines the height of the brownies. If you choose a tall pan your brownies will rise with it but this doesn't mean that your entire batter will rise to the top. It might just be the top crust that will get very hard while the rest of the brownies are dense and don't have as much rise.
