SUMMARY
Today we learned all about cakes and icings (specifically buttercreams). We made a Sacher torte in which we whipped egg whites and folded them into the batter to get the delicate crumb in the end.
PERSONAL OBSERVATIONS
The Creme Anglaise is made just like the pastry cream but it is not thickened with a starch. High ratio cakes also have a definite difference in flavor compared to a cake with say an all purpose flour.
