PERSONAL OBSERVATION
The dough for the pot stickers was very hard to work with. As i was kneading it i had to add almost three more cups worth of flour but eventually it all came together and actually turned out very well. The bottoms of the pot stickers got a little bit too toasty so next time i would cut the time in half when browning the bottoms. As you add the water to the HOT pan it's important that you have a lid on hand. It will start to look like the whole pan is going to catch on fire but that's what you want. Add your liquid, put the top on, and try to not burn the place down.
